Parmesan Roasted Broccoli This is great with fresh broccoli, but I like to do it with frozen broccoli because that is easier to keep on hand and prepare on short notice. Most recipes for this require half roasting the broccoli, turning it, and then putting the parmesan on top before finishing the roasting. I wanted to simplify it to be just once into and out of the oven. Since the time to fully roast broccoli would make the parmesan burn, I partially pre-cook the broccoli in the microwave. If you use frozen chopped broccoli instead of cut broccoli, then you only need to pre-thaw it as it will cook quickly (and the end result will be a more cohesive patty). The parmesan cheese should not be finely grated, which would cook to quickly and burn. Instead it should be shredded. The bread crumbs help keep the cheese from burning and they add a nice crunch.
Pasta Salad Good for potlucks and picnics. This is not a strict "pasta salad" as it uses a cooked tomato sauce, but it is designed to be served cold.
Peach Pie A classic pie. A good way to use a large amount of fresh peaches.

Simple Chocolate Cake Because of the simplicity of the recipe, this cake can be made very quickly. For even faster preparation, the dry ingredients can be premixed and stored for quick assembly later. (Another measuring step can be saved by pre-measuring the sugar and storing it alongside the dry ingredient mix.) Note that oil is used instead of butter, so no time is spent waiting for the butter to soften.

Spinach Mushroom Lasagna This recipe uses "no-cook" lasagna noodles because these can be used right out of the box, thus it has extra water to account for them. If you want to use traditional noodles, boil them in a separate step and leave out the water below.
Spinach Quiche Baked spinach and cheese pie. This variation uses cottage cheese which results in a somewhat spanakopita flavor.
Spinach Sandwich Spread This is similar to spinach dip, but thicker so that it can be spread on bread to make a sandwich. It also has a higher proportion of spinach to cream cheese than a typical dip. After spreading it on one slice, it is good to sprinkle chipotle powder (or smoked paprika) and top with some chopped cilantro.

Tomato Chutney This is a chunky, salsa-like dish that is a good accompanyment to parata. It is tangy and slightly sweet. It's not the coconut-based chutney that is often paired with idli or dosa in South Indian cuisine. The original recipe is here

Vanilla Glaze I generally do not like heavy, thick frosting or icing on cake. They are too sweet and overpowering for me. They tend to overwhelm the actually cake underneath. If I want to dress up a cake, I much prefer to use a glaze. Although this is mostly the same thing as frosting, it is much more understated and subtle. This one is runny enough to pour over the cake, but thick enough to not simply run off if the top is not flat.

Whole Wheat Bread Flour Bread baked with pure whole wheat flour often results in a dense loaf. Although whole wheat flour has plenty of protein to form gluten, the bran cuts the protein strings and gluten formation is compromised. The solution to this is to add wheat gluten to the whole wheat flour to increase the protein content even further.

Zucchini Chutney If you grow zucchini in your garden, you will need to find ways to prepare the fruit which will grow abundantly. This is a useful preparation since it goes well with idli, dosai, rice, chapati, naan, bread, etc.
